Get rid of the rind and eyes from the pineapple. Lower the fruit into quarters lengthwise and take away the core from each and every wedge. Continue to slice each and every quarter into four or 5 slices. Cut each and every slice in 50 percent lengthwise. Sprinkle +/- one tablespoon brown sugar more than each and every slice. Sprinkle coconut on top. Bake for 15 minutes in a preheated 325 degree oven. Serve 2 slices per person.
